Ingredients
- 1 large eggplant
- 1 large chopped onion
- 1/4 c. butter or margarine, melted
- 1 tsp. Worcestershire sauce
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 1/2 c. cracker crumbs
- 1 small green pepper, chopped
- 1 c. sharp Cheddar cheese
- dash of hot sauce
Directions

1Peel eggplant and cut into 1/2-inch cubes.

2Cook in boiling water 8 minutes or until tender.

3Drain well and set aside.

4Saute onion and green pepper in butter in large skillet until vegetables are tender.

5Stir in eggplant, cheese, Worcestershire sauce, salt, pepper and hot sauce.

6Spoon eggplant mixture into a lightly greased 1 1/2-quart baking dish.

7Sprinkle with cracker crumbs. Bake for 30 minutes at 350°.

8Serves 4 to 6.
