Eggplant Supreme

Ingredients

  • 1 large eggplant
  • 1 large chopped onion
  • 1/4 c. butter or margarine, melted
  • 1 tsp. Worcestershire sauce
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 c. cracker crumbs
  • 1 small green pepper, chopped
  • 1 c. sharp Cheddar cheese
  • dash of hot sauce

Directions

    Peel eggplant and cut into 1/2-inch cubes.

    Cook in boiling water 8 minutes or until tender.

    Drain well and set aside.

    Saute onion and green pepper in butter in large skillet until vegetables are tender.

    Stir in eggplant, cheese, Worcestershire sauce, salt, pepper and hot sauce.

    Spoon eggplant mixture into a lightly greased 1 1/2-quart baking dish.

    Sprinkle with cracker crumbs. Bake for 30 minutes at 350°.
