Eggplant Upside Down Pie

  • 1 1/2 tsp. olive oil
  • 3 Tbsp. bread crumbs
  • 1 lb. eggplant, cut in 1/4-inch slices
  • 1/4 c. oil
  • 1 c. long grain rice
  • 1/2 lb. sweet Italian sausage (bulk)
  • 1/4 c. chopped onion
  • 2 cloves garlic, minced
  • 1 egg, slightly beaten
  • 3 Tbsp. tomato paste
  • 1 tsp. oregano
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. shredded Provolone cheese
  • 1/2 c. shredded Mozzarella cheese

    Preheat broiler.

    Grease bottom and sides of 10-inch pie plate with 1 1/2 teaspoon olive oil.

    Dust with bread crumbs.

    Place eggplant on a baking sheet; brush both sides with 1/4 cup oil. Broil about 5 minutes or until lightly browned on both sides. Reduce oven to 350°.

    Cook rice following package directions. Salt.

    Drain excess liquid.
