- 2 eggs
- 2 tablespoons tomato puree
- 2 tablespoons olive oil
- 1 pinch salt and pepper
Directions

1Use one little earthenware pan for each person.

2Put into pan 2 tbs olive oil and 2 tbs tomato puree and let cook until tomato appears almost dry.

3Add eggs, scramble white with tomato and cook until white is done.

4Add salt and pepper and serve hot with your preferred bread aside.

5Choice of good tomato puree is very important.

6Canned tomatoes or fresh, ripe tomatoes may also be used.

7Pepper should be freshly ground.
