  • 2 eggs
  • 2 tablespoons tomato puree
  • 2 tablespoons olive oil
  • 1 pinch salt and pepper

Directions

    Use one little earthenware pan for each person.

    Put into pan 2 tbs olive oil and 2 tbs tomato puree and let cook until tomato appears almost dry.

    Add eggs, scramble white with tomato and cook until white is done.

    Add salt and pepper and serve hot with your preferred bread aside.

    Choice of good tomato puree is very important.

    Canned tomatoes or fresh, ripe tomatoes may also be used.

    Pepper should be freshly ground.
