Ingredients
- 3 Tbsp. chopped onion
- 3 Tbsp. chopped green pepper
- 2 Tbsp. melted fat or oil
- 1 1/2 c. cooked or canned tomatoes
- 2/3 c. water
- 1/3 c. rice
- 1/2 tsp. salt
- pepper
- 4 eggs
Directions

1Cook the onion and green pepper in oil in a large frypan, until the onion is lightly browned.

2Add the tomatoes and water; heat to boiling.

3Add the uncooked rice, salt and pepper.

4Cover; cook over low heat until rice is tender, 25 to 30 minutes.

5Stir occasionally with a fork to keep from sticking.

6If the rice becomes dry, add a little more water.

7Drop eggs on rice.

8Cover; simmer 5 to 10 minutes, or until eggs are as firm as desired.
