- 1 (10 oz.) pkg. frozen chopped spinach
- 2 oz. softened cream cheese
- 1/4 tsp. salt
- 1/8 tsp. white pepper
- 1 c. grated medium Cheddar cheese
- 2 large eggs
Directions

1Preheat oven to 450°. Thaw spinach and drain well.

2Blend spinach, cream cheese, salt and pepper; press into bottom of 2 small casserole dishes.

3Crack 1 egg on top of each spinach bed. Top each dish with 1/2 cup Cheddar cheese and bake on rack above center of the oven for 10 minutes.

4Garnish lightly with cayenne pepper, if desired.

5Serves 2 people.
