- 2 potatoes
- 14 cup onion, chopped
- 2 teaspoons butter
- 1 cup Egg Beaters egg substitute
- parsley
- garlic powder
- salt
- pepper
- 14 cup cheese, shredded
Directions

1Cook potatoes and onions in frying pan with butter until done.

2Set aside in a covered bowl while making eggs.

3Scramble Egg Beaters, parsley, garlic powder, salt and pepper.

4Place 1/3 Potato mixture on plate.

5Sprinkle cheese over potatoes.

6Place eggs on top of cheese.

7Serve with fruit salad.
