  • 1 nopal large, chopped
  • 1/2 tomato chopped
  • 2 tablespoons onion minced
  • chile pepper Green, chopped

  • ground black pepper
  • 2 eggs

Directions

    Add the vegetable oil to a skillet on medium heat. Add the nopal, tomato, onion, and chile pepper. Add pinches of salt and black pepper and mix well. Cover the pan and cook on low heat for 15 minutes. Stir frequently.

    Once the nopal has changed color and the liquid has evaporated, add the eggs and mix well.
