  • 1 lb. eggplant
  • 1/2 lb. dry bread crumbs
  • 1 small can evaporated milk
  • 1/4 c. milk
  • 1/4 c. finely chopped green pepper
  • 1 Tbsp. chopped pimientos
  • 1/4 c. chopped onions
  • 1/4 c. chopped celery
  • 1/2 stick oleo
  • 2 slightly beaten eggs
  • 2 oz. grated cheese
  • dash of pepper or to taste
  • dash of sage or to taste
  • dash of m.s.g. or to taste
  • dash of salt or to taste

Directions

    Peel eggplant and soak in salt water overnight in refrigerator (this is important).

    Soak bread crumbs in evaporated milk and whole milk.

    Saute chopped vegetables in oleo until tender.

    Boil eggplant until nearly tender and drain well.
