- 1 lb. ground beef
- 1 medium onion, chopped
- 1 1/2 tsp. garlic powder
- 1 tsp. cumin
- 1 1/2 lb. Velveeta
- corn tortillas (1 pkg.)
- 1 can enchilada sauce
- salt and pepper to taste
- 1 can chopped black olives
Directions

1Brown ground beef, onion, garlic powder, cumin, salt and pepper.

2Drain excess grease.

3Return to pan; add black olives and approximately 1 pound of Velveeta.

4Heat until cheese is melted. Place 1 tablespoon of meat in tortilla shell and shape like a taco.

5Place in a 9 x 13-inch pan and pour 1 can of enchilada sauce plus 1/2 can of water over enchiladas.

6Top with chunks of remaining Velveeta.

7Cover with foil and bake at 350° for 20 to 30 minutes.
