Enchilada Casserole

  • 2 lb. ground beef
  • 1 c. water
  • 1 medium green pepper, diced
  • 2 c. shredded Cheddar cheese
  • 2 (14 1/2 oz.) cans diced tomatoes
  • 2 Tbsp. chili powder
  • 1 large onion, chopped
  • 2 pkg. 6-inch corn tortillas (about 20)

    Combine beef, tomatoes, water, chili powder, green pepper and onion in a large saucepan. Bring to

    boiling; reduce heat. Simmer, covered, for 20 minutes.

    Season to taste with salt and pepper.

    Line a 9 x 13 x 2-inch baking pan with 1/3 of the tortillas.

    Top with 1/3 of the sauce and 1/3 of the cheese. Repeat with the remaining ingredients, making 2 more layers but reserving the remaining 1/3 cheese.

    Bake, covered, in a 350° oven for 45 minutes.

    Sprinkle the remaining cheese on top of the casserole.

    Serve with salsa, if desired. Makes 8 to 10 servings.
