Enchilada Casserole

  • 2 lb. ground beef
  • 2 cans cream of mushroom soup
  • 2 cans cream of chicken soup
  • 2 small cans chopped black olives
  • 2 onions, chopped
  • 24 flour tortillas (small size)
  • 2 cans enchilada sauce (mild)
  • 2 large pkg. grated sharp Cheddar cheese

    Brown beef and onions; drain.

    Mix meat, soups, enchilada sauce and olives.

    Tear up tortillas in bottom of large baking dish. Layer one layer of tortillas, then one layer of cheese. Repeat layers again.

    Depending on size of baking dish, you should have 2 to 3 layers.

    Bake for 45 minutes at 350° in a preheated oven.
