Enchilada Casserole

  • 1 pound Ground Hamburger Meat
  • 1 whole Onion, Chopped
  • 1 Tablespoon Olive Oil
  • 1 can (15 Oz. Size) Enchilada Sauce
  • 1 can (10.5 Oz. Size) Cream Of Mushroom Soup
  • 1 can (11 Oz. Size) Mexicorn
  • 1 can (4 Oz. Size) Green Chiles, Chopped
  • 8 whole Corn Tortillas, Or As Needed For 2 Layers Of Tortillas
  • 2 cups Grated Cheddar Cheese (or More If You Like)
  • Black Olives And Green Onions, For Garnish

Directions

    Brown ground beef and onion in oil, and when browned, add the enchilada sauce, mushroom soup, corn, green chiles, and simmer together for a few minutes.

    Line a 9x13 pan with corn tortillas.

    Add half the meat mixture, sprinkle with grated cheese, and then place about 4 corn tortillas, torn up over mixture and add the other half of the beef mixture and top with cheddar cheese.

    Place in a 350 degrees F oven and bake for about 20 minutes or so.

    Sprinkle the top with some black olives and cut up green onions for garnish.

    Cut into squares to serve.
