  • 1 12 lbs ground beef
  • 30 -40 Ritz crackers, 1 1/2 stacks (crushed)
  • 1 (2 1/4 ounce) cansliced olives
  • 1 chopped yellow onion
  • 1 tablespoon butter
  • 1 lb shredded cheddar cheese
  • 2 tablespoons flour
  • 3 (8 ounce) cans tomato sauce
  • 2 (8 ounce) cans water
  • 0.333 (10 1/16 ounce) can enchilada sauce

Directions

    Brown ground beef (drain fat).

    Crush Ritz crackers and spread crumbs on bottom of a 9x12 baking pan.

    Spread ground beef and sprinkle with olives.

    Saute onion in butter.

    Add flour and stir.

    Add sauces and water and simmer 5-10 minutes.

    Spread over the crackers, beef, and olives and top with cheese.

    Bake uncovered at 350 degrees for 30 minutes.
