  • 2 lb. ground beef
  • 1 large chopped onion
  • 1 tsp. chili powder
  • 1 clove minced garlic
  • 1 medium can enchilada sauce
  • 1 large can stewed tomatoes
  • salt to taste
  • 1 can chopped mushrooms, drained
  • 1 lb. grated cheese (Cheddar)
  • 1 doz. tortillas

Directions

    Brown meat and onions; drain fat.

    Add chili powder, garlic, sauce, tomatoes, salt and simmer 20 minutes.

    Add mushrooms.

    Line a 9 x 13-inch pan with tortillas.

    Top with half meat mixture, then half the cheese.

    Repeat tortillas, meat mixture and cheese. Bake at 350° about 20 to 30 minutes.
