- 2 lb. ground beef
- 1 large chopped onion
- 1 tsp. chili powder
- 1 clove minced garlic
- 1 medium can enchilada sauce
- 1 large can stewed tomatoes
- salt to taste
- 1 can chopped mushrooms, drained
- 1 lb. grated cheese (Cheddar)
- 1 doz. tortillas
Directions

1Brown meat and onions; drain fat.

2Add chili powder, garlic, sauce, tomatoes, salt and simmer 20 minutes.

3Add mushrooms.

4Line a 9 x 13-inch pan with tortillas.

5Top with half meat mixture, then half the cheese.

6Repeat tortillas, meat mixture and cheese. Bake at 350° about 20 to 30 minutes.
