- 1 onion, chopped
- 1/2 green bell pepper, chopped
- 3 Tbsp. butter
- 2 (8 oz.) cans tomato sauce
- 1/8 tsp. Tabasco sauce
- 1 Tbsp. chili powder
- 2 lb. ground beef
- 8 oz. Velveeta or Cheddar cheese, shredded
- 16 flour tortillas
Directions

1Saute the onion and green pepper in skillet until tender.

2Add tomato sauce, Tabasco sauce and chili powder.

3Simmer 30 minutes. Brown ground beef in skillet, stirring until ground beef is crumbly.

4Drain.

5Place 2 to 4 tablespoons of meat and equal amount of shredded cheese in center of each tortilla.

6Roll up to enclose filling, securing with wooden picks.

7Pour 1/2 cup of tomato sauce mixture in a 9 x 13-inch baking dish.

8Arrange tortillas in dish; cover with remaining sauce . Bake at 350° for 30 minutes or microwave on Medium for 10 to 12 minutes.

9Top with additional cheese.
