  • 1 1/2 lb. ground beef
  • 10 oz. shredded Cheddar cheese
  • 6 oz. shredded Jack cheese
  • 1 (30 count) pkg. corn tortillas
  • 1 medium onion, chopped
  • 1 pkg. taco seasoning
  • 2 pkg. enchilada seasoning
  • 1 (12 oz.) can tomato paste
  • spring onion, chopped

Directions

    Brown ground beef and 1 medium onion until onion is tender. Drain. Add taco seasoning and 1 cup water.

    Bring to a boil. Turn to simmer until liquid is almost absorbed.
