- 1 lb. ground beef
- 1 clove minced garlic
- 1 tsp. salt
- 1/2 c. chopped onion
- 1/2 lb. grated mild Cheddar cheese
- 1/2 lb. grated Mozzarella cheese
- 1 (8 oz.) pkg. sour cream
- 1 (3 oz.) can sliced mushrooms, drained
- 1 (4 1/2 oz.) can chopped black olives, drained
- 12 corn tortillas
Directions

1Brown ground beef, garlic, salt and onion; drain grease.

2Add cheeses; heat until melted.

3Add sour cream, mushrooms and olives; set aside.

4Soften corn tortillas in hot oil; drain.

5Fill each tortilla with meat mixture; roll tightly.

6Place seam side down on foil lined cookie sheet (spray foil with cooking spray or oil). Top with slice of Mozzarella cheese.

7Sprinkle with parsley flakes. Cover with foil (also sprayed).

8Bake at 350° for 10 to 20 minutes (until cheese on top melts).

9Serve with salsa or picante sauce.
