- 1 lb. ground beef
- 2 medium onions, chopped
- 1 pkg. corn tortillas
- 1 can pitted black olives, chopped
- 1 lb. grated cheese (Monterey Jack, Monterey Jack with peppers, Cheddar or a combination)
- 3 cans enchilada sauce
Directions

1Cook beef with onions.

2Prepare tortilla and assemble one at a time.

3Fry tortilla in hot oil for a few seconds on each side. Dip into 1 can of heated enchilada sauce and remove immediately. Place on a plate and put olives, cheese and meat mixture on tortilla.

4Roll up and place seam side down in a 13 x 9 x 2-inch baking dish.

5When all enchiladas are in baking dish, cover with remaining sauce.

6Sprinkle top with grated cheese, olives and raw chopped onions.

7Bake at 350° until bubbly.
