- 2 c. whole wheat pastry flour
- 2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 c. butter or margarine
- 1/3 c. honey
- 1 egg
- 1 tsp. vanilla
- 2 tsp. grated orange rind
- 1/3 c. orange juice
- 1/2 c. shredded coconut
- 1 1/2 c. shredded carrots
Directions

1In small mixing bowl, combine the flour, baking powder, cinnamon and nutmeg.

2In medium mixing bowl, beat butter until fluffy.

3Beat in honey, egg, vanilla and orange rind.

4Beat in the dry ingredients alternately with the orange juice.

5Stir in coconut and carrots.

6Pour into a greased or parchment-lined 9 x 13-inch baking pan.

7Bake at 325° for 20 to 30 minutes.

8Cool and cut into bars.

9Makes 24 bars.
