Ingredients
- 1/2 cup almonds finely chopped
- 1 1/2 cups gluten-free rolled oats
- 1 1/4 cups gluten free rice crisp cereal
- 1 teaspoon ground cinnamon
- 1/4 cup hemp seeds
- 15 milliliters sunflower seeds
- 1/4 cup unsweetened shredded coconut
- 2 tablespoons chia seeds
- 1/2 cup brown rice syrup
- 1/4 cup almond butter or peanut butter
- 1 teaspoon pure vanilla extract
- 1/4 cup dark chocolate chips mini non-dairy, optional
Directions

1Line a square pan with parchment paper or other nonstick surface

2In a large bowl combine oats, almonds, rice crisp, hemp seeds, sunflower seeds, coconut, chia seeds and cinnamon. Mix.

3In a small sauce pan, stir together brown rice syrup and almond butter until nicely mixed. Cook over medium heat until mixture slightly bubbles. Remove and add in vanilla extract.

4Pour mixture over dry ingredients and combine using a spatula. It is very thick and hard to stir. If your using chocolate chips, allow mixture to cool before adding them in.

5Transfer mixture to pan and spread evenly. Lightly wet your hands and push mixture into the pan evenly.

6Place pan in freezer for 10 minutes (or until completely firm)

7Lift square out of pan using the parchment paper. Place on cutting board. Using a pizza roller or knife, cut 6 rows and then slice in half to make 12 bars.

8Wrap bars individually or place them in snack ziplock bags. Store in freeze or fridge. These bars will last up to 2 weeks in the fridge and 1-2 months in the freezer.
