  • 2 cups cooked white rice
  • 1 Tbsp oil
  • 1 Tbsp butter
  • 1 lb boneless, skinless chicken
  • 3/4 lb andoiulle, diced
  • 1 small onion, minced
  • 1 green bell pepper, chopped
  • 1 bay leaf
  • 2 - 3 Tbsp flour
  • One 14-oz can diced tomatoes
  • One 14-oz can chicken broth
  • 1 tsp cumin
  • 1 tsp Worcestershire sauce
  • 1 Tbsp garlic powder
  • 1/2 Tbsp black pepper
  • 1/2 Tbsp onion powder
  • 1/2 Tbsp oregano
  • 1/2 Tbsp thyme
  • Salt

Directions

    Place a large, deep skillet over medium high heat. Add oil and butter to the pan. Cube the chicken and place it in hot oil and butter Brown for 3 minutes, then add the sausage and cook 2 minutes ore. Add pinion and seasonings.

    Add the vegetables and sautA for 5 minutes. Sprinkle flour over the pan and cook for 1 or 2 minutes more. Stir in tomatoes and broth and add Worcestershire sauce.

    Bring liquids to a boil.

    Simmer for a short while to let flavors meld.

    Serve over the rice.
