- 4 to 5 lb. eye of the round roast
- 2 Tbsp. tomato paste
- 2 carrots, sliced
- 1 onion, sliced
- 1 c. red wine
- 1 clove garlic, crushed
- 2 celery stalks, sliced
- 4 potatoes, cut into bite-sized pieces
- 1 can beef broth
Directions

1Roll roast in flour and brown on all sides in oil in Dutch oven or heavy roaster.

2Add broth, wine, tomato paste, crushed garlic, carrots, celery and onion.

3Cook on top of stove 1 1/2 hours.

4Add potatoes and cook 1/2 hour more or until potatoes are done.
