  • 1 box (18 Ounce) Box Duncan Hines (or Your Favorite) Lemon Cake Mix
  • 1 Small Box Instant Lemon Pudding
  • 4 Large Eggs
  • 1 Cup Sour Cream
  • 1/2 Cup Vegetable Oil
  • 3 Teaspoons Lemon Extract (optional)
  • Juice Of 1 Lemon
  • Zest Of 1 Lemon
  • Extreme Lemon Glaze Recipe (listed Below)

    1. Preheat oven as directed on the cake mix box.

    2. Mix all ingredients together.

    3. Beat on medium speed for 2 minutes.

    4. Pour into buttered pan (I use a bunt pan).

    5. Bake for the time specified on the cake mix box.

    GLAZE

    * 2 cups powdered sugar

    * zest of one lemon

    * fresh lemon juice

    1. Mix powdered sugar and lemon zest in a small bowl.

    2. Add lemon juice, one Teaspoon at a time, stirring well after each addition.

    3. Continue adding lemon juice a LITTLE at a time until it is the consistency of a thick cake batter.

    4. Drizzle glaze over the top of cooled cake allowing it to run down the sides.
