Ingredients
- 4 eggs
- 1 3/4 c. sugar
- 1 c. olive or canola oil
- 1/2 tsp. salt
- 1/2 to 3/4 c. walnuts or pecans, chopped
- 2 c. flour
- 1 tsp. cinnamon
- 1 tsp. baking soda (note: self-rising flour includes baking soda)
- 1 tsp. vanilla
- 6-8 diced apples
- 1/2 c. raisins
Directions

1Combine sugar and oil in mixing bowl.

2Beat for 5 minutes and add eggs one at a time.

3Continue to beat well until combined. Add dry ingredients mixing well.

4Fold in apples, raisins and nuts. Bake in 350°

5oven for 1 hour in a 9 x 13-inch pan.

6Cool on rack for 30 minutes before serving.

7Serves 16 - 20.
