- 1 lb. fresh cod or scrod fillet
- 1 clove garlic, crushed
- 2 egg whites
- 2 Tbsp. grated onion
- 2 Tbsp. lemon juice
- 1 medium size shredded carrot
- 1/2 tsp. seasoning
- 2 Tbsp. salad oil
- 1 lemon, cut in wedges

Directions

1In 12-inch skillet over high heat, heat fish, garlic, parsley and 1 cup water to boiling.

2Reduce heat to low.

3Cover and simmer 10 minutes until fish flakes. Remove fish to paper towels to drain.
