  • 1 large cooked potato (approximately 1/2 lb.)
  • 1 lb. fresh cod or scrod fillet
  • 1 clove garlic, crushed
  • 2 egg whites
  • 2 Tbsp. grated onion
  • 2 Tbsp. lemon juice
  • 1 medium size shredded carrot
  • 1/2 tsp. seasoning
  • 2 Tbsp. salad oil
  • 1 lemon, cut in wedges
  • parsley

    In 12-inch skillet over high heat, heat fish, garlic, parsley and 1 cup water to boiling.

    Reduce heat to low.

    Cover and simmer 10 minutes until fish flakes. Remove fish to paper towels to drain.
