- 1/4 c. chopped onion
- 1/4 c. butter or margarine
- 2 medium chopped potatoes
- 1 tsp. water
- pepper and salt to taste
- 1/4 tsp. salt
- 6 eggs
- 2 Tbsp. milk
- 1 c. cooked ham, diced
Directions

1In 10-inch skillet, cook onion and potatoes, water and 1/4 teaspoon salt in butter until tender, stirring occasionally.

2Beat together eggs, milk, salt and pepper.

3Stir in ham.

4Pour over potatoes and cook without stirring until mixture begins to set on bottom and side of pan.

5Using a large spoon lift and fold partially cooked egg mixture so uncooked portions flow underneath. Cook on medium heat about 4 minutes or until done.
