Ingredients
- 8 medium potatoes
- 1/2 c. diced onion (sweet is best)
- 1/2 c. diced sweet red pepper
- 1/2 to 1 c. diced ham
- 1/4 c. finely sliced green onions
- 1 container Second Nature egg substitute product or 6 to 8 whole eggs, beaten
- salt and pepper to taste
- 1/4 tsp. onion powder
- 1 Tbsp. vegetable oil
Directions

1Peel and dice potatoes.

2Place oil in large nonstick frying pan.

3Heat oil until very hot, but not smoking.

4Add potatoes. Cook, turning frequently, until done, but not too brown.

5Add onion and red pepper.

6Saute until tender.

7Add ham.

8Saute until warmed through.

9Add eggs/Second Nature.

10Reduce heat and cover for 3 to 5 minutes.

11You want the eggs to cover ingredients and cook them as the eggs cook so don't stir the mixture at this point.

12Remove the lid and turn over the contents with a spatula. Cover and cook 3 to 5 additional minutes.

13Remove cover; season with salt and onion powder.

14Add green onions.
