Ingredients
- 3 Tbsp. butter
- 2 1/2 c. frozen hash brown potatoes
- 4 green onions or 2 Tbsp. chopped onion
- 1/2 sweet green pepper, diced
- 2 c. diced ham
- salt and pepper to taste
- 4 large eggs, beaten
- 4 oz. shredded Cheddar cheese
Directions

1Melt butter in frying pan over medium heat.

2Saute the vegetables and ham and seasonings for 3 minutes.

3Cover and cook over low heat about 20 minutes.

4Pour beaten eggs over the vegetables.

5Do not stir.

6Cover and cook until eggs are set, about 10 minutes.

7Sprinkle with the cheese and heat only until cheese melts.

8Cut into pie shaped wedges and serve.

9Serves 4.
