Ingredients

  • 3 Tbsp. butter
  • 2 1/2 c. frozen hash brown potatoes
  • 4 green onions or 2 Tbsp. chopped onion
  • 1/2 sweet green pepper, diced
  • 2 c. diced ham
  • salt and pepper to taste
  • 4 large eggs, beaten
  • 4 oz. shredded Cheddar cheese

Directions

    Melt butter in frying pan over medium heat.

    Saute the vegetables and ham and seasonings for 3 minutes.

    Cover and cook over low heat about 20 minutes.

    Pour beaten eggs over the vegetables.

    Do not stir.

    Cover and cook until eggs are set, about 10 minutes.

    Sprinkle with the cheese and heat only until cheese melts.

    Cut into pie shaped wedges and serve.
