- 1/4 c. margarine
- 1/4 c. diced onion
- 3 medium potatoes, cut into 3/4-inch cubes
- 12 oz. chopped ham, cut into 3/4-inch cubes
- 6 eggs
- 1/2 tsp. salt
- 1/4 c. shredded sharp Cheddar cheese
Directions

1Saute onion and potatoes in large skillet, in hot margarine until potatoes are slightly browned.

2Cook, covered, 15 minutes or until potatoes are almost tender.

3Stir in ham cubes.

4Beat eggs with salt; pour over potato mixture.

5Cook over low flame, occasionally slip spatula underneath potatoes and ham to let uncooked egg flow to bottom.

6When eggs are set, sprinkle with cheese; cover skillet a minute or until cheese is melted.

7Makes 6 servings.
