Fasolatha(Bean Soup)

Ingredients

  • 2 c. beans (dried Northern)
  • 1 1/2 c. finely chopped onions
  • 1 c. finely chopped celery with some of the leaves (scrape celery of strings)
  • 2 carrots, sliced in thin slices
  • 2 Tbsp. chopped parsley
  • 2 cloves garlic, cut in half
  • 1 c. canned tomatoes, mashed
  • 3/4 c. olive oil
  • 2 tsp. salt
  • some pepper
  • 2 to 3 Tbsp. chicken bouillon base (to your taste)
  • 2 potatoes, quartered long ways, then cubed

    Soak beans

    in cold water overnight.

    If you forget to do this, then cover beans with water; let them come to a boil for about 2

    minutes.

    fire and cover beans for an hour. Drain; rinse beans and make soup.
