Ingredients
- 2 c. beans (dried Northern)
- 1 1/2 c. finely chopped onions
- 1 c. finely chopped celery with some of the leaves (scrape celery of strings)
- 2 carrots, sliced in thin slices
- 2 Tbsp. chopped parsley
- 2 cloves garlic, cut in half
- 1 c. canned tomatoes, mashed
- 3/4 c. olive oil
- 2 tsp. salt
- some pepper
- 2 to 3 Tbsp. chicken bouillon base (to your taste)
- 2 potatoes, quartered long ways, then cubed
Directions

1Soak beans

2in cold water overnight.

3If you forget to do this, then cover beans with water; let them come to a boil for about 2

4minutes.

5Take

7fire and cover beans for an hour. Drain; rinse beans and make soup.
