- 1 c. skim milk
- 2 eggs, beaten
- nonstick cooking spray

1Beat all ingredients until smooth.

3Pour mixture into muffin tin to 1/2 full.

4Bake at 425° for 35 to 45 minutes until golden brown. This is a good accompaniment to a soup.
