- 6 loaves pita bread
- 2 bunches scallions
- 3 Tbsp. dried mint
- 3 cucumbers
- 1 bunch parsley
- 4 tomatoes
- 3 to 4 lemons
- 1/2 c. olive oil
- salt and pepper to taste
- 1/2 head romaine lettuce
Directions

1Toast bread in 350° oven until crunchy and break into small pieces.

2Place in large bowl.

3Cut cucumbers and tomatoes in small chunks.

4Mince parsley.

5Put all of these vegetables over the bread.

6Add mint, lemon juice, olive oil, salt and pepper to taste.

7Mix well; serve over romaine lettuce.
