  • 1 stick margarine
  • 2 eggs
  • 1 onion, chopped
  • 1 box Jiffy cornbread mix
  • 2 cans creamed corn
  • 1 (16 oz.) sour cream
  • 2 c. shredded cheese
  • sugar to taste

Directions

    Saut onions in butter. In a large mixing bowl, mix eggs, Jiffy mix, creamed corn, sour cream and 1 cup cheese. Add onions and butter. Mix well. To this mixture, add sugar to taste. Spray a large shallow baking dish with Pam and pour mixture in. Top with remaining cheese. Bake at 350° for about 30 minutes. It does not take long, usually when cheese on top is melted, it is done. This makes a large casserole.
