Ingredients
- 1 large onion, chopped
- 1/2 c. butter or margarine
- 4 c. water
- 6 c. peeled and diced potatoes
- 2 lb. fresh or frozen cod fillets, cut in large chunks
- 3 Tbsp. lemon juice
- 2 c. milk
- 2 1/2 tsp. salt
- 2 tsp. pepper
- 2 (12 oz.) cans evaporated milk
- chopped fresh parsley
Directions

1In Dutch oven or soup kettle, saute onion in the butter.

2Add water and bring to a boil.

3Add potatoes; cook 10 minutes.

4Add fish and lemon juice.

5Reduce heat and simmer for 10 minutes.

6Add milk, evaporated milk, salt and pepper.

7Garnish with parsley and serve piping hot.
