- 2 Tbsp. salad oil
- 1 (4 lb.) beef rump roast, rolled
- 1 bay leaf
- 2 tsp. salt
- 1 tsp. pepper
- 1/2 tsp. thyme leaves
- 8 medium potatoes, peeled
- 8 large carrots
- 1 lb. small white onions, peeled
- 1/2 c. all-purpose flour
- water
Directions

1Heat oil in a Dutch oven.

2Brown roast on all sides.

3Add the bay leaf, salt, pepper and thyme leaves.

4Cover and cook over low heat for 3 hours.

5Will make its own juices.

6After 3 hours, add your potatoes, carrots and onions and continue to cook over low heat for another hour.
