- 5 c. all-purpose flour
- 1 pkg. active dry yeast
- 1/2 c. mashed, cooked potatoes
- 1/3 c. cooking oil
- 1/4 c. sugar
- 1 tsp. salt
Directions

1In a mixer bowl combine 2 cups of flour and the yeast. Combine potatoes, oil, sugar, salt and 1 1/2 cups warm water (110°).

2Add to dry ingredients; beat at low speed with electric mixer for 1/2 minute, scraping sides of bowl constantly.

3Beat 3 minutes at high speed.

4By hand, stir in remaining flour.

5Cover; refrigerate for at least 2 hours or up to 3 days.

6Punch down; turn out on lightly floured surface.

7Cover; let rest 10 minutes. With lightly floured hands, shape into 24 buns.

8Place into a greased 13 x 9 x 2-inch pan.

9Cover; let rise until double (40 minutes).

10Bake at 400° until done, 16 to 20 minutes.

11Makes 24 rolls.
