Festive Appetizer Quiche

  • 1 (9-inch) pie shell, partially baked
  • 6 oz. (1 1/2 c.) Swiss cheese, shredded
  • 1 (4 1/2 oz.) can shrimp, well drained and chopped (or 1 c. fresh shrimp)
  • 3 eggs
  • 1 1/2 c. light cream
  • 1 Tbsp. chopped chives
  • 3/4 tsp. salt
  • 1/2 tsp. dry mustard
  • dash of nutmeg
  • 1/4 c. Parmesan cheese

Directions

    Sprinkle Swiss cheese and shrimp over bottom of pastry shell. Beat eggs with cream, chives, salt, dry mustard and nutmeg.

    Pour over cheese and shrimp.

    Sprinkle with Parmesan cheese.

    Bake at 375° for 30 to 35 minutes.

    Let stand 20 minutes before serving. Cut in thick slices.

    May be served warm or chilled.
