Festive Broccoli Moulds

- 450 g fresh broccoli (can use frozen)
- 50 ml water
- 5 tablespoons single cream
- 50 g butter, melted
- 4 egg yolks
- 2 teaspoons coarse grain mustard
- 2 egg whites, whisked until peaking
Directions

1Place broccoli in a bowl with the water.

2Cover and microwave at 100% (High) for 8 - 10 minutes until tender.

3Drain well.

4Liquidise broccoli with the cream in a blender or food processor, until smooth.

5Turn into a bowl, and beat in butter, egg yolks, mustard and seasoning.

6Carefully fold in egg whites.

7Divide mixture among 8 individual greased moulds, and level surfaces.

8Arrange in a circle in microwave, and cook at 100% (High) for 6 - 7 minutes until just firm, re-arranging once.

9Turn out onto serving plate and keep warm, to serve with main meal.
