- 1/4 c. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 1/2 to 3 lb. fryer, cut up
- 2 Tbsp. oil
- 2/3 c. molasses
- 1 (8 oz.) can sliced pineapple
- 1 Tbsp. prepared mustard
- 1 Tbsp. cider vinegar
- 1 can (16 oz.) sweet potatoes, drained
Directions

1Combine flour, salt and pepper.

2Dredge chicken in flour. Brown in hot oil.

3Drain pineapple, reserving juice.

4Combine juice, molasses, mustard and vinegar; mix well.

5Place chicken in 3-quart casserole; arrange potatoes around chicken.

6Brush with half of sauce.

7Cover and bake at 350° for 30 minutes.

8Uncover and top with pineapple.

9Brush with remaining sauce.

10Cook 30 minutes more.
