- 1 12 lbs fresh asparagus
- 1 medium red onion, sliced and separated into rings
- 2 tablespoons olive oil
- 14 cup crumbled feta cheese
- salt and pepper
Directions

1Place asparagus in 1/2 inch water in lg skillet.

2Bring to a boil.

3Reduce heat, cover and simmer for 5 minutes.

4In small skillet, saute onion in oil until crisp-tender.

5Place asparagus on plate.

6Top with onions and feta.

7Season with salt and pepper to taste.
