- 4 chicken breasts, boned and skinless
- 4 ounces onions, chopped
- 1 teaspoon salt
- 2 medium tomatoes, peeled
- 2 green chili peppers, seeded
- gingerroot
- 4 cups water
- 12 ounces okra, sliced
- 1/4 cup tomato paste
- 2 cups rice, cooked (optional)
Directions

1Place chicken and onion in a heavy saucepan or Dutch oven.

2Sprinkle with salt.

3Using the fine blade of a grinder, chop tomato, chili peppers and ginger.

4Add mixture to chicken.

5Pour in water and bring to boil. Reduce heat and simmer, covered, for about 20 minutes or until chicken is barely tender.

6Add okra.

7Stir in tomato paste. Contine simmering, uncovered, until chicken and okra are tender.

8Place each breast on a individual dinner plate. Divide vegetable and liquid evenly and pour over chicken breast.

9Serve over 1/2 cup rice if desired.
