- 7 ounces pasta (cut fideo)
- 2 tablespoons vegetable oil
- 1 (14 1/2 ounce) can stewed tomatoes, with liquid
- 1 3/4 cups water
- 1/4 teaspoon salt
- 1/3 cup grated parmesan cheese
Directions

1In a non-stick skillet, heat the oil over medium to medium-high heat. Add the fideo and fry until golden brown. Remove from pan and set aside.

2If you don't like chunky tomatoes - pulse in food processor until they are of desired consistency.

3In same pan bring tomatoes, water and salt to a boil.

4Return pasta to pan with boiling tomatoes. Simmer, partially covered, for about 10 minutes. Stir occasionally to keep noodles from sticking. It's done when liquid is absorbed and pasta is tender.

5Remove from heat and stir in grated parmesan.

6Cover and let stand 5 minutes before serving.
