Fiery Mango-Marinated Ribs

- 6 lbs beef ribs (or your favorite ribs)
- 1 large fresh ripe mango
- 2 tablespoons chipotle chiles in adobo
- 14 cup ketchup
- 14 cup tequila
- 14 cup freshly squeezed lime juice
- 2 tablespoons oyster sauce or 2 tablespoons hoisin sauce
- 2 tablespoons honey
- 6 garlic cloves, finely minced
- 14 cup finely minced ginger
- 14 cup chopped fresh cilantro stem
Directions

1Remove the membrane from the underside of the ribs.

2Place the ribs in a rectangular dish or baking pan.

3For the marinade: Peel the mango and cut the flesh away from the seed.

4Combine the mango flesh and chipotle chiles in a food processor fitted with a metal blade and puree.

5Transfer the mixture to a bowl and combine with the ketchup, tequila, lime juice, oyster sauce or hoisin sauce, honey, garlic, ginger, and cilantro.

6Makes 2 cups.

7Coat the ribs evenly on both sides with half the marinade.

8Marinate the ribs refrigerated for at least 15 minutes.

9For more flavor, marinate for up to 8 hours.

10Set aside the remaining marinade to serve as a sauce for the ribs.

11To grill the ribs, if using a gas barbecue, preheat to medium (325 F).

12If using charcoal or wood, prepare a fire.

13Occasionally during cooking, baste the ribs with extra marinade, stopping 15 minutes before removing the ribs from the grill.

14To serve, cut each side of ribs in half, into 3 sections, or into individual ribs.

15Transfer to a heated serving platter or 4 heated dinner plates and serve at once accompanied by the reserved sauce.
