- 8 ounces tomato sauce
- 1/2 cup orange juice
- 1/2 cup onions finely chopped
- 2 tablespoons raisins, seedless
- 2 tablespoons pimentos chopped
- 1/2 teaspoon oregano crushed
- 1/2 teaspoon chili powder
- 1 x garlic cloves minced
- 12 ounces chicken breast halves, boneless, skinless
- 2 teaspoons cornstarch
- 1 tablespoon water
- 1/4 cup parsley leaves snipped
- 3 cups rice cooked
Directions

1In a large skillet combine tomato sauce, orange juice, onion, raisins, pimiento, oregano, chili pwder, garlic, and hot pepper sauce.

2Bring to boiling, reduce heat.

3Cover and simmer 5 minutes.

4Stir in chicken; return to boiling.

5Cover and simmer 12 to 15 minutes more or until chicken is tender and no longer pink.

6Meanwhile combine cornstarch and water.

7Stir into skillet.

8Cook and stir until thickened and bubbly.

9Cook and stir 2 minutes more.

10Toss parsley with rice.

11Serve chicken mixture over rice.
