  • 1/4 c. vegetable shortening or oil
  • 1 c. all-purpose flour
  • 1 c. Aunt Jemima enriched yellow corn meal
  • 4 tsp. baking powder
  • 2 tsp. sugar (optional)
  • 1/2 tsp. salt (optional)
  • 1 1/2 c. (6 oz.) shredded Cheddar cheese
  • 1 (8 1/2 oz.) can cream-style corn
  • 1 (4 oz.) can chopped hot or mild green chillies, drained
  • 1/2 c. milk
  • 2 eggs, beaten

    Heat oven to 400° in 8 or 9-inch square baking pan or 10-inch ovenproof skillet.
