- 1 1/4 c. chopped onion
- 1/4 c. butter or margarine
- 4 1/4 c. uncooked long grain rice
- 2 (6 oz. each) cans small pitted olives, drained
- 2 (28 oz. each) cans tomatoes with liquid, cut up
- 1 1/4 c. chopped green pepper
- 1 Tbsp. salt
- 1 to 2 tsp. chili powder
- 1 tsp. dried oregano
- 1/2 tsp. pepper
- 4 c. water
- 3 c. (12 oz.) shredded Cheddar cheese
Directions

1In a skillet over medium heat, saute onion in butter until tender. Transfer to a large bowl.

2Stir in the next eight ingredients.

3Divide between two ungreased 13 x 9 x 2-inch baking pans.

4Stir two cups of water into each pan.
