- 3 14 lbs ripe figs
- 12 cup fresh lemon juice
- 1 12 teaspoons grates lemons, zest of
- 12 cup water
- 1 (1 3/4 ounce) box Sure-Jell
- 7 12 cups sugar
Directions

1Wash figs in cold water and remove stems.

2Place figs in a large saucepan and add the lemon juice, zest and water.

3Stir well and add the sure jell.

4Turn heat onto high and stir until a hard boil is reached.

5Add the sugar.

6Stirring constantly bring mixture to a hard boil.

7Boil for 1 minute.

8Remove from heat and skim off foam.
-
9Stir and skim for 5 minutes.
-
10Ladle into clean hot sterile jars and seal.

11Process in a boiling water bath for 10 minutes.
