Ingredients
- 4 lb. prepared figs
- 3 1/2 lb. sugar
- 1/4 c. lemon juice
- 2 lemons, sliced
Directions

1Wash and peel firm-ripe figs.

2Add sugar and lemon juice to 8 cups boiling water.

3Stir until sugar dissolves.

4Add figs.

5Boil until clear.

6Add lemons when figs are about 2/3 done.

7If the syrup becomes too thick before figs are clear, add boiling water, 1/2 cup at a time.

8Let stand 12 to 24 hours in a cool place. Pack preserves in hot jars.

9Process pints and quarts 30 minutes at simmering (180° to 185°) in a water bath canner.
