Ingredients

  • 6 lb. figs
  • 3 lb. sugar
  • 1/4 c. soda
  • 1 large lemon

Directions

    Wash figs and add soda.

    Cover with hot water; let stand 5 minutes, then rinse well.

    Add sugar and start cooking.

    Add juice of lemon and cut peeling into small slices.

    Cook 30 minutes first day and then set aside.

    Cook 30 minutes second day and then set aside.

    Cook 30 minutes third day or until desired thickness and syrup will be clear.

    Seal when hot in hot jars, using paraffin to cover preserves before applying lid.
