Finger Cookies

  • 3 sticks margarine, melted
  • 1/2 box graham crackers, crushed
  • 1 can coconut
  • 1 (12 oz.) jar peanut butter
  • 1 box powdered sugar
  • 1 tsp. vanilla
  • 1 c. finely chopped pecans
  • 1 (12 oz.) pkg. chocolate chips
  • 1 block paraffin (or you may use block chocolate for melting)

Directions

    Combine 2 1/2 sticks melted margarine (1/2 stick is reserved for chocolate coating), cracker crumbs, coconut, peanut butter, powdered sugar, vanilla and pecans.

    Shape dough into cookies the size of your little finger.

    Chill overnight.

    Combine chips, margarine and paraffin in a double boiler.

    Dip cookies in this mixture until well coated.

    Place them on waxed paper until cool. Store them in airtight container.
